Join Emma Bruce, Founder of Provenance Kitchen for a 6 hour cooking workshop specialising on abalone and beef. In this class, you'll spend time getting familiar with using a sous vide. The ultimate 'surf and turf' meal, this workshop takes your repertoire to a whole new level.   

In this class, you'll cover 4 courses; 

  • Shucking, tenderising and cooking abalone
  • Slow cooked beef short-ribs
  • Seasonal side vegetables 
  • Seasonal dessert

Your day will start with an immersive experience out on the farm, walking through the paddocks with Cape Grim Beef farmer, John Bruce (Emma's father). You'll have the chance to get up close with the cattle and hear what goes into grass-fed beef production, as well as their environmental and sustainability standards.

You will also visit an abalone farm and see how this delicacy is farmed in the pure waters of the north-west Tasmanian coast. Before you head into the kitchen, you'll join Emma Bruce on the beach to forage for local herbs. 

You'll spend the rest of the day in the kitchen at Highfield Historic Site, covering preparation and cooking techniques designed to be repeated at home. This experience ends with a group meal, matched with premium Tasmanian wines. This class is designed for enthusiastic home cooks, but is suitable for all levels.

Do I need to bring anything? 

You don't need to bring anything for this experience. Please wear comfortable casual clothing and footwear that is suitable to stand in all day. A jacket is also recommended to take when out on the farm or foraging along the beach. If you bring your own knives, you are entirely responsible for their care and safety. 

Group size

Classes have a minimum of 4 and maximum of 8 participants. 

Location

This experience is held in Stanley, north west of Tasmania, Australia at Highfield Historic Site. Approx. 4hours and 40mins drive from Hobart, 2hours and 40mins from Launceston. 

How to get there

This experience is self-drive. No shuttle buses are available. 

Minimum participant requirements

All tours require a minimum number of participants to avoid cancellation. We reserve the right to cancel a schedule tour where minimum numbers are not met. All purchases are subject to re-confirmation no later than 24 hours before tour commencement. If in the event that minimum number of participants are not met, you will be eligible for either a full refund or exchange for other Off the table tours.

Cancellation penalties 

Cancellations received within 3 days of tour commencement, will incur a penalty of 100% of the ticket price per person. This is because Off the table producers often outlay considerable resources upfront to run tours and cannot recover late cancellation costs.

Unused tickets

Unused tickets are tour tickets that have been purchased and have not been claimed by the purchaser for selected tours. Unused tickets cannot be reclaimed for future tours, and are deemed void after the selected tour has completed. 

Exchanges and date changes

Tour exchanges are permitted up to 3 days prior to the commencement date of the original tour purchased. If you would like to exchange your tour ticket, please contact reservations@offthetabletasmania.com.au as early as possible. 

Breach of Terms and Conditions 

In the event that you breach Off the table Terms and Conditions, including a breach of Terms and Conditions communicated by third party Producers during a tour, you will be instructed to leave the tour. In this situation, your ticket will be forfeit and you will not be eligible for a refund or exchange.

Breach of Terms and Conditions communicated by third party Producers during a tour may include (but not limited to) compliance with biosecurity protocols, safety, responsible alcohol consumption and tour boundaries (areas where you can and cannot access). 

As a customer of Off the table, you agree to the following terms and conditions:

Payment

All tours require full payment to complete ticket purchase. 

Liability

You indemnify us against any loss, damage, claim, action or expense (including legal expense on an indemnity basis) which the Indemnified Party suffers as a direct or indirect result of any of the following:

- a breach of this agreement by you, including but not limited to any failure to abide by rules or regulations stated by supplying Producers

- a breach of this agreement by you, including but not limited to the act of illegal or criminal behaviour

- any warranty given by you under this agreement being incorrect or misleading in any way, or any negligent act or failure to act by you or any of your employees, agents, officers or sub-contractors.

- If any indemnity payment is made by you under this clause, you must also pay any additional amount equal to any tax which is payable by us in respect of the indemnity payment.

Insurance 

You must obtain and maintain insurances on terms, such as relevant travel insurance or medical insurance. You must provide us with evidence of the currency of any insurance that you are required to obtain on request by us at any time.

General

This agreement is governed by the laws of the State of New South Wales and the parties submit to the non-exclusive jurisdiction of the courts of that State.

Definitions:

For the purposes of this agreement:

“Food experiences” means an experience that includes details of various locations to visit with third party Farmers and Producers.
“Food offering” means a food or refreshments which included in the Food experience 
“Land” means land that is owned by third party Farmers and Producers.

“Off The Table” and “us” and similar expressions means Off the Table Pty Ltd. 
“Product” means goods that are combined with Food experiences and purchased by you. 
“You” and similar expressions means you, the purchaser of Food experiences and Products from Off the table.
